Lunch…Better late than never right?!

I finally make it home and boy was I hungry! Talk about a late lunch… it was after 230pm! Better late than never right?!

I decided to have a slightly larger late lunch than normal because I am planning on going to the gym or running this evening! With this in mind I decided to have my left overs from last night from World Curry, (brown rice, vegetables (carrots, mushrooms, zucchini)), with a touch of teriyaki. On the side I had some celery and homemade garlic hummus, which I made yesterday! YUM!

Now that my belly is full (and happy) I am going to drink some water and enjoy what is left of the afternoon! Hope you do the same!

Busy Afternoon…

After reading a bit I decided to make some hummus for the week. I like to eat vegetables and usually prefer something to “dip” them in. Hummus is really easy to make and what is fun is that it is all about taste, you really can’t go wrong!

Here is what I used:

– 2 cans of garbanzo beans

– 3 crushed garlic  cubes (I find that it blends better than using garlic cloves)..also you can use less or more garlic depending on how garlicky you like it 🙂

– a tiny bit of lemon juice

– a tiny bit of oil

– juice from the cans –just a little to keep it moist …better to add than take away (I have learned that lesson!)
