Pesto Pizza
As I said I made Pesto Pizza and WOW…it was great!
I used Whole Wheat Crust from Trader Joe’s and spread the Lemony Pesto sauce on top:
Even my ‘taste tester friend’ said the pesto was really good.
As for toppings we had basil, tomatoes and sliced black olives… and one half side with cheese.
I had the side without the cheese 😉
The pesto was really good and I will be making it again, although I may try using pignoli nuts (pine nuts) to see if the texture and flavor are a bit different. Again the pesto above was great, but I love to experiment and come up with new things so that will be added to my ‘to do’ list.

Mashed Cauliflower
After volleyball and an 8 mile bike ride I came home pretty hungry! I bought some cauliflower a few days ago and thought I would try making mashed potatoes, I mean mashed cauliflower!
I steamed the cauliflower first:
I tried mashing it with a fork, but I think I would still be mashing. I had to break out the hand mixer for this one! I added some butter, salt, pepper and spinach on the side to add some color 🙂
To my surprise it was pretty filling. I was only able to eat half of what I made. It also taste a LITTLE bit like mashed potatoes. I have to say it was pretty darn good! I will be making this again!

Hummus Sandwich
Last night for dinner I wanted to try out my newly made garlic hummus so I made a hummus, tomato and basil sandwich on Rudy’s Bakery bread (Rosemary Olive Oil). This bread is FANTASTIC! I toasted the bread first and then added all my toppings 🙂
Vegetable Pasta
Last night I made some angel hair spelt pasta with tomato basil sauce and put some veggie (broccoli, mushrooms and olives) in the sauce. It was mighty good!
Week at a Glance
I have had a busy week as usual. Lots of studying got done as well as some running, volleyball and softball!

I made some more nachos one day for lunch! Boy these were good!!
I also found some new pasta that was really good.

Saturday Nachos!
Don’t you feel like the weekends go by SO fast?? This weekend was busy with a lot of sporting activities, but also lots of fun!! My weekend started off with a great 15 mile run and then a nap 😉
Saturday night I made nachos for dinner. Boy they were good. I decided to do an experiment with a new recipe I found for “Vegveeta” Cheese Dip. It was actually really good and my friend who LOVES cheese and had low expectations for the “cheese” dip actually really liked it too!

Sweet Potato Fries
I made it to the store today to get some fruit …FINALLY! I can’t stand not having fruit/veggies in the house! I picked up some apples, pears and some spinach and romaine lettuce.
With that said for dinner I made some sweet potato fries with olive oil, rosemary, salt and pepper. On the side I had a pear! Dinner was good tonight! YUM!
Sunshine Veggie Burger
I am getting toward the end of the month and that means I will start getting creative soon with my meals… odds and ends!
Tonight though I had one whole wheat english muffin, from Trader Joe’s, left to make a Sunshine Veggie burger. The only thing I had to put on the burger was mustard and onions! It was good despite the fact I was missing spinach and tomatoes.
I am also out of fruit and vegetables so it was a lonely site on my plate. I will HAVE to make a special trip to the store for more fruit and vegetables. I can’t stand not having them around.
Well it is good night for me as I am running tomorrow morning!
