Sweet Potato Fries

I love sweet potatoes and what a better way to eat them is as fries! Picked some up at Trader Joe’s a few days ago so I cooked some up tonight and had them with a salad!

Here is my salad (spinach, mushrooms, onions and sliced almonds)!

And finally I used some really great ketchup! It contains NO HFC (High Fructose Corn Syrup)! It is made my Muir Glen. YUM! Taste just like regular ketchup!

Chickpea Salad

Yesterday I made a chickpea sandwich for lunch (verses a tuna or chicken salad sandwich)… It was SO yummy! Chickpeas are a great source of protein as well as fiber! Majority of people today do not get enough fiber in their diets!

Today instead of a chickpea sandwich, I decided to put the chickpeas on my spinach salad. Mighty tasty if you ask me!

Chickpea Sandwich

Honey Cinnamon Almonds

After I finished the chocolate covered almonds, I remembered tasting some honey cinnamon almonds at the Farmer’s Market a while back. I attempted to recreate what I had. I dumped what few almonds I had left in a bowl and added some honey (from the farmers market) and some cinnamon and mixed it all together.

I then baked them for a while and let the cool. They turned out pretty good, but could use some work (like more cinnamon :) ). They are no where near as good as the ones I had at the farmers market, but it was a good start. I will have to work on this more to prefect them!!

Chocolate Covered Almonds

With all these chocolate posts you’d think I like chocolate. In reality I am actually not a huge fan, I know I know… people give me a hard time all the time. I like baking regardless of what it is so sometimes that involves chocolate :)

Long story short, since I had left over melted grain sweetened chocolate chips from the banana I had to figure out what else I could cover since I didn’t want to waste it. I had some raw almonds so I dumped some in and they turned out pretty good!
